A few minutes later, Ms. Hernandez checked in on the cooking class. She opened the door to about 30 students decked out in aprons and chef’s hats, paying rapt attention to Janelle Hicks-Devine as she led the class in a demonstration on how to make healthy turkey chili. Ms. Hernandez explained that like all the after-school instructors, Ms. Hicks-Devine works at the school and has some level of expertise in her activity. In her case, she teaches English and runs her own business, called Mama’s Cooking.

“And guess who has to come back to taste test? Me!” Ms. Hernandez joked.
